CITRUS HYSTRIX – COOKING LIME LEAVES
Citrus hystrix – this unusual citrus plant has distinctive leaves that look like one leaf is growing from the end of another. The highly aromatic leaves are used extensively as a key flavouring ingredient in South East Asian cooking. Fruit rind is candied and used to flavour curry pastes. This compact growing lime is a most worthwhile addition to the herb garden to lend unique flavours to your culinary delights.
Plants grow to 3m tall, with a similar spread and grow best in warm climates. They can withstand short periods of lower temperatures, but not heavy frosts. They enjoy well drained soil and free air movement around the tree. Small white flowers with a strong fragrance are followed by small green fruit with a knobbly skin. Attractive subjects for pots and containers in herb or ornamental gardens.
